Steak w/Mushrooms

This recipe is one of the first recipes I ever made for date night with my husband. We have cut back how much we eat red meat but every once an awhile we still get a craving for a good steak. My recipe is very easy to make and doesn’t require that much time either. I saute the mushrooms with minced garlic, red wine, and lemon juice until they start to caramelize then melt bleu cheese on the mushrooms. I add the finished mushrooms to grilled New Yorks. The recipe makes 4 servings.

Ingredients:

  • 4 thin cut New York steaks
  • 2 cups sliced fresh button mushrooms
  • 2 teaspoons bottled minced garlic
  • 1 Tablespoon lemon juice
  • 2 Tablespoons red wine (cabernet)
  • 1 Tablespoon margarine
  • ¼ cup crumbled bleu cheese
  • dashes salt
  • dashes ground black pepper

 Instructions:

1. In a large pan melt margarine over medium heat then add mushrooms and season with salt and pepper. Cook mushrooms for 6-8 minutes stirring occasionally.

2. Add minced garlic, lemon juice, and red wine to mushrooms stirring everything together continue to cook for another 3-5 minutes or until mushrooms start to caramelize. Stir in bleu cheese then turn off heat and cover.

3. Heat grill to medium-high heat and season steaks with ground black pepper then grill for 6-8 minutes turning once halfway through steaks will be rare to medium rare cook longer for well done steaks. Remove steaks from grill place in platter and evenly spoon mushroom mixture over steaks then serve.
