Steak w/Mushrooms

This recipe is one of the first recipes I ever made for date night with my husband. We have cut back how much we eat red meat but every once an awhile we still get a craving for a good steak. My recipe is very easy to make and doesn’t require that much time either. I saute the mushrooms with minced garlic, red wine, and lemon juice until they start to caramelize then melt bleu cheese on the mushrooms. I add the finished mushrooms to grilled New Yorks. The recipe makes 4 servings.

Ingredients:

  • 4 thin cut New York steaks
  • 2 cups sliced fresh button mushrooms
  • 2 teaspoons bottled minced garlic
  • 1 Tablespoon lemon juice
  • 2 Tablespoons red wine (cabernet)
  • 1 Tablespoon margarine
  • ¼ cup crumbled bleu cheese
  • dashes salt
  • dashes ground black pepper

 Instructions:

1. In a large pan melt margarine over medium heat then add mushrooms and season with salt and pepper. Cook mushrooms for 6-8 minutes stirring occasionally.

2. Add minced garlic, lemon juice, and red wine to mushrooms stirring everything together continue to cook for another 3-5 minutes or until mushrooms start to caramelize. Stir in bleu cheese then turn off heat and cover.

3. Heat grill to medium-high heat and season steaks with ground black pepper then grill for 6-8 minutes turning once halfway through steaks will be rare to medium rare cook longer for well done steaks. Remove steaks from grill place in platter and evenly spoon mushroom mixture over steaks then serve.

French Onion Turkey Burgers

I was trying to think of a different way to make turkey burger and looked in the pantry to see what I had which was a can of French onion soup, english muffins, and red wine. I mixed the ingredients together then grill the burgers which I baste with more French onion soup while they cook. I serve them on english muffins instead of hamburger rolls.  The recipe makes 4 burgers.

Ingredients:

  • 1 pound ground turkey
  • 1 Tablespoon Worcestershire
  • 1 Tablespoon red wine
  • 1 Tablespoon diced sweet onion
  • ¼ cup can French onion soup plus 3 Tablespoons
  • ¼ cup plain panko bread crumbs
  • dashes ground black pepper
  • 1 medium tomato
  • 4 lettuce leaves
  • 4 sliced white American cheese
  • 4 English muffins

 Instructions:

1. In a large mixing bowl mix together turkey, wine, Worcestershire, onion, bread crumbs, black pepper, and 3 Tablespoons French onion soup. Once thoroughly mixed form 4 patties about ¼ pound each then place in refrigerator for 2 hours.

2. Heat the grill on medium-high heat then grill burgers over direct heat for 20-25 minutes or until cooked through turning once halfway through. The last 10 minutes baste with ¼ cup French onion soup. The last 5 minutes melt cheese then remove from heat and serve with muffins, tomato, and lettuce.

Cooking w/Wine

Over the past few months, I have been using wine in my cooking. I find it gives dishes excellent flavor. The type of wine I use in a dish depends on what I’m cooking such as using a cooking white wine for chicken or fish dishes. I use red wine in beef or pork dishes. One side dish that I love cooking in wine is mushrooms and it doesn’t matter if it is red or white wine. I usually prefer using red wine to cook mushrooms because I think the oaky, dark cherry, and leathery flavor of some red wines blends with earthy undertones of the mushrooms. I usually use cabernet to cook my mushroom in.  But I have also cooked mushrooms in white wine as well which is good too. Take some sliced button mushrooms sauté in margarine season with salt and pepper then add some wine. Let mushrooms cook for a good 3-5 minutes once the wine is add because the mushrooms will caramelize with the wine flavors (see mushrooms recipe). They are great as side dishes or on top of steak, pork, or chicken (see chicken & mushrooms recipe). I like using wine in my sauces such as my brown sauce recipe (see beef & noodle recipe), which I use for many beef dishes such as beef & broccoli or beef & noodles dish (see recipe).

 White wine is great to use for a sauce to pour over fish. Heat a pan with about 1-2 tablespoons of margarine then flour fish place in pan to cook for about 10-15 minutes or until fish is cooked through turning over once halfway through. Once fish is done remove then add another tablespoon of margarine to pan, add 1 teaspoon lemon zest, 2 teaspoons bottled lemon juice and 2 teaspoons cooking white wine. Let cook for 2-3 minutes stirring frequently then pour over cooked fish and serve. Another cooking wine I have just started using is Marsala wine. Marsala wine is very strong so when using a person should add some water to it. Be careful to slow add the water until you get the taste you want. A person doesn’t want to delude the taste just reduce how strong it is. I really enjoy using wine when I cook and you might too. Get in the kitchen and have some fun cooking with wine.
